Ingredients
- 1 ½ cups pork broth*
- 1 can SunVista® Black Beans (drained)
- ¼ cup chopped onion
- ¼ cup rough chopped cilantro
- 2-3 teaspoons dried crushed red peppers
- 1 clove garlic
- 2 tablespoons vegetable oil
- ½ teaspoon ground black pepper
- 1 pound, 5 ounces pork ribs, cooked in water*
- 2 cups hot cooked rice
- 1 can SunVista® Black Beans (warmed)

- ¼ cup chopped onion
- ¼ cup rough chopped cilantro

- 1 pound, 5 ounces pork ribs, cooked in water*
- 2 cups hot cooked rice
- 1 can SunVista® Black Beans (warmed)
Directions
Place pork broth, drained black beans, onion, cilantro, crushed red peppers, and garlic in a blender. Cover and blend until smooth.
Heat oil in large saucepan over medium-high heat. Add blended bean mixture and cook for 5 minutes. Season with black pepper. Add pork and cook for 3 to 5 minutes or until heated through.
Serve stew over rice and black beans.
* Cut 2 pounds pork ribs into 1-2 rib sections. Place in large pot and cover with water. Cook over medium low heat for 2 to 3 hours or until very tender. Drain and reserve broth. Refrigerate if not using immediately.
