Ingredients

  • 1 ½ cups pork broth*
  • 1 can SunVista® Black Beans (drained)
  • ¼ cup chopped onion
  • ¼ cup rough chopped cilantro
  • 2-3 teaspoons dried crushed red peppers
  • 1 clove garlic
  • 2 tablespoons vegetable oil
  • ½ teaspoon ground black pepper
  • 1 pound, 5 ounces pork ribs, cooked in water*
  • 2 cups hot cooked rice
  • 1 can SunVista® Black Beans (warmed)

Ingredients

  • 1 ½ cups pork broth*
  • 1 can SunVista® Black Beans (drained)
  • ¼ cup chopped onion
  • ¼ cup rough chopped cilantro
  • 2-3 teaspoons dried crushed red peppers
  • 1 clove garlic
  • 2 tablespoons vegetable oil
  • ½ teaspoon ground black pepper
  • 1 pound, 5 ounces pork ribs, cooked in water*
  • 2 cups hot cooked rice
  • 1 can SunVista® Black Beans (warmed)

Directions

Place pork broth, drained black beans, onion, cilantro, crushed red peppers, and garlic in a blender. Cover and blend until smooth.

Heat oil in large saucepan over medium-high heat. Add blended bean mixture and cook for 5 minutes. Season with black pepper. Add pork and cook for 3 to 5 minutes or until heated through.

Serve stew over rice and black beans.

* Cut 2 pounds pork ribs into 1-2 rib sections. Place in large pot and cover with water. Cook over medium low heat for 2 to 3 hours or until very tender. Drain and reserve broth. Refrigerate if not using immediately.
