- 1 can SunVista® Pinto Beans (29oz)
- ¼ teaspoon salt
- ⅛ teaspoon ground black pepper
- 4 ounces chorizo, crumbled
- 1 cup shredded lettuce
- 1 1 avocado, peeled, pitted, and sliced
- ½ cup crumbled queso fresco cheese
Directions
Grill nopales over direct high heat for 5 to 8 minutes, turning once. Set aside.
Heat lard in a large skillet over medium high heat. Add red onion and cook 3 to 5 minutes or until onion is tender. Remove about a quarter of the whole beans from the can. Add remaining beans, reserving most of the liquid, to the skillet. Mash the beans, adding liquid as needed. Stir in remaining whole beans. Season with salt and pepper. Keep warm.
Cook chorizo in a small skillet for 4 to 6 minutes over medium high heat or until cooked through.
Top each nopale with about ¼ cup of the refried beans. Sprinkle with chorizo, lettuce, avocado slices, and queso fresco cheese.
*If trimmed nopales are not available, the cactus spines must be removed. Using the tip of a sharp knife remove each spine. Cut about ¼-inch around the edge of the cactus as that is where many of the spines reside. Refrigerate until ready to us.
