Ingredients

  • ½ cup vegetable oil
  • 2 cups white rice (not instant)
  • ¼ cup chopped onion
  • 1 clove garlic, minced
  • 4 cups chicken broth
  • ¼ teaspoon ground black pepper
  • 1 (15oz) can SunVista® Black Beans (drained, rinsed)
  • 1 cup chopped jarred roasted red peppers
  • 1 tablespoon finely chopped jalapeno pepper
  • 2 tablespoons chopped fresh parsley

Ingredients

  • ¼ cup chopped onion

  • 4 cups chicken broth
  • ¼ teaspoon ground black pepper
  • 1 (15oz) can SunVista® Black Beans (drained, rinsed)
  • 1 cup chopped jarred roasted red peppers
  • 1 tablespoon finely chopped jalapeno pepper
  • 2 tablespoons chopped fresh parsley

Directions

Heat oil in a large skillet over medium-high heat. Add rice and cook 3 to 5 minutes or until golden brown, stirring frequently. Drain off excess oil.

Stir in onion and garlic and cook for 1 minute. Add chicken broth and stir well. Cover. Bring to a boil and reduce heat to medium-low. Cook for 25 to 30 minutes or until rice is tender.

Stir in black beans, roasted red peppers, jalapeno peppers, and parsley. Serve immediately.

Tips: Swap the chicken broth for vegetable broth and this makes a great vegetarian dish. This delicious side dish can also be served as an entrée!
