  • 1 can SunVista® Black Beans (30oz) (drained, rinsed)
  • 2 cups mashed potatoes*
  • 1 cup cooked, chopped broccoli
  • 4 eggs
  • ¼ cup chopped onion
  • ¼ cup dry breadcrumbs
  • 2 tablespoons cornstarch
  • ½ teaspoon salt
  • ½ teaspoon ground black pepper
  • ¾ cup vegetable oil
  • 4 cups salsa

Ingredients

  • 1 can SunVista® Black Beans (30oz) (drained, rinsed)
  • 2 cups mashed potatoes*
  • 1 cup cooked, chopped broccoli
  • 4 eggs
  • ¼ cup chopped onion
  • ¼ cup dry breadcrumbs
  • 2 tablespoons cornstarch
  • ½ teaspoon salt
  • ½ teaspoon ground black pepper
  • ¾ cup vegetable oil
  • 4 cups salsa

Directions

Mash 2 cups black beans in a large bowl. Add potatoes, broccoli, eggs, onion, breadcrumbs, cornstarch, salt and pepper. Mix well. Stir in remaining unmashed black beans.

Heat ½ cup oil in a large skillet over medium-high heat. Scoop out about ¼ cup portions of the bean mixture into the hot oil. Gently press down to form patties. Cook 3 to 4 minutes or until well browned on the bottom. Carefully turn patties and cook an additional 2 to 3 minutes. Remove patties to a platter. Add remaining ¼ cup oil to the skillet and cook remaining patties. Remove patties to platter.

Drain oil remaining in the skillet. Add salsa to the skillet and cook 1 to 2 minutes or until hot. Return patties to the skillet. Serve immediately.

*Use purchased mashed potatoes or leftover mashed potatoes.
