Peruvian Bean and Vegetable Stew
Ingredients
- 2 tablespoons vegetable oil
- 1 medium onion, chopped
- 1 tablespoon chili powder
- 2 teaspoons smoked paprika
- 2 teaspoons ground cumin
- 1 teaspoon salt
- 1 teaspoon dried Mexican oregano
- 1 teaspoon grated lemon peel
- 1/2 teaspoon garlic powder
- 2 large carrots, cut into 1/2 inch slices
- 2 celery stalks, sliced
- 6 small red potatoes (about 1lb), cut into 1 inch pieces
- 2 cups vegetable broth
- 1 (14.5oz) can fire roasted diced tomatoes
- 1 (29oz) can SunVista® Peruvian Beans (drained, rinsed)
- 6 lemon wedges, if desired

Directions
In large saucepan or Dutch oven, heat vegetable oil over medium heat. Add onion; cook 5 minutes, stirring occasionally. Stir in chili powder, paprika, cumin, salt, oregano, lemon peel and garlic powder. Cook and stir 1 minute. Add carrots, celery, potatoes, broth and tomatoes. Bring to a boil; reduce heat. Cover; simmer 35 to 40 minutes or until vegetables are tender. Stir in beans. Cook 2 to 3 minutes or until thoroughly heated. Serve with lemon wedges.
