Pork Stew with Peruvian Beans
Ingredients

- 8 tomatillos, shucked and cored
- 3 dried pasilla chiles, that have been soaked and seeded*
- ¼ cup chopped onion
- 1 clove garlic
- 2 cups chicken broth
- 2 tablespoons vegetable oil

- 1 pound, 5 ounces pork ribs, cooked in water**
- 1 can SunVista® Peruvian Beans (drained)
- 2 tablespoons chopped cilantro
- ½ cup chopped onion
- ½ cup chopped radishes
- 1 avocado, sliced

- 1 pound, 5 ounces pork ribs, cooked in water**
- 1 can SunVista® Peruvian Beans (drained)
- 2 tablespoons chopped cilantro
- ½ cup chopped onion
- ½ cup chopped radishes
- 1 avocado, sliced
Directions
Place tomatillos, pasilla chilies, onion, garlic, and chicken broth in a blender. Cover and blend until smooth.
Heat oil in large pot over medium-high heat. Add blended sauce and cook for 5 minutes or until hot. Add pork, beans, and cilantro. Cook for 5 minutes or until hot.
Serve stew with onion, radishes, and avocado.
*To soak chiles, cover with hot water for at least 20 to 30 minutes. Remove stem and seeds. Chiles can be soaked ahead of time. Refrigerate until ready to use.
** Cut 2 pounds pork ribs into 1-2 rib sections. Place in large pot and cover with water. Cook over medium low heat for 2 to 3 hours or until very tender. Drain. Refrigerate if not using immediately.
