Ingredients
- 2 (15oz) cans SunVista® White Beans (drained)
- ¼ cup chopped onion
- 3 dried ancho chiles, that have been soaked and seeded*
- 4 cups vegetable broth
- 1 tablespoon vegetable oil
- ½ teaspoon ground black pepper
- 2 tablespoons chopped cilantro

- ¼ cup chopped onion
- 3 dried ancho chiles, that have been soaked and seeded*
- 4 cups vegetable broth
- 1 tablespoon vegetable oil
- ½ teaspoon ground black pepper
- 2 tablespoons chopped cilantro
Directions
Reserve ¾ cup white beans. Place remaining beans in a large blender. Add onion, ancho chiles, and vegetable broth. Cover blender and puree until mixture is smooth.
Heat oil in a large saucepan over medium-high heat. Add soup and black pepper. Heat for 5 to 8 minutes or until soup is hot. Top each bowl of soup with about 3 tablespoons of white beans and a sprinkle of cilantro.
*To soak chiles, cover with hot water for at least 20 to 30 minutes. Remove stem and seeds. Chiles can be soaked ahead of time. Refrigerate until ready to use.
Tip: For a more robust soup, add an additional can of SunVista White Beans to the hot broth.
