Easy BBQ Chicken, Corn and Pasta
Ingredients
- (8oz) uncooked penne pasta
- 1 teaspoon olive oil
- 1 pound boneless, skinless chicken breasts, cubed
- 1/4 cup barbecue sauce
- 1 (15oz) can SunVista® Kidney Beans (drained, rinsed)
- 1 (15.25oz) can whole kernel corn (drained)
- 1 (14.5oz) can petite diced tomatoes (do not drain)
- 1 & 1/2 cups (6oz) shredded Pepper Jack cheese (divided)

Directions
Cook pasta as directed on package. Drain; keep warm
Meanwhile, heat oil in 12-inch nonstick skillet over medium-high heat. Add chicken. Cook 5 to 7 minutes or until no longer pink in center, stirring frequently. Stir in barbecue sauce, beans, corn and tomatoes. Cook until thoroughly heated, stirring frequently. Stir in cooked pasta and 1 cup of cheese. Cook until thoroughly heated. Top with remaining 1/2 cup cheese.
Tip: Use your favorite barbecue sauce in this recipe.
