  • 1 serrano pepper, finely diced

  • ¼ teaspoon ground black pepper
  • 4 bolillo rolls

  • ¼ teaspoon salt

  • 5 ounces (or 1 cup) shredded machaca or dried beef or cooked beef

  • ¼ teaspoon ground black pepper
  • 4 bolillo rolls
  • Salsa, optional

Directions

To make the refried beans, heat the lard in a large skillet over medium heat. Add onion and cook 2 to 3 minutes or until tender. Drain beans, reserving the liquid. Reserve ¾ cup beans. Add remaining beans and add about ⅓ cup liquid to skillet. Mash beans until they are nearly smooth, adding additional liquid to make creamy. Stir in whole beans with salt and pepper. Keep warm.

Heat oil in a medium skillet over medium heat. Add onion, machaca, tomato, and serrano chile. Cook for 2 to 3 minutes or until vegetables are tender. Beat eggs in a medium bowl with black pepper. Add to skillet and cook 5 to 6 minutes, stirring occasionally or until eggs are cooked through.

Split rolls. Top with refried beans and machaca. Serve with salsa, if desired.
