Grilled Black Bean Tostadas

- 1 (15oz) can SunVista® Black Beans (drained, rinsed)
- 1 (14.5oz) can diced tomatoes with roasted garlic (do not drain)
- 1 teaspoon minced jalapeno chili, if desired
- 1/2 teaspoon ground cumin
- 1 cup chopped cooked chicken or turkey
- 4 (8-inch) flour tortillas
- 1 cup shredded sharp Cheddar cheese
- 2 green onions, thinly sliced

Directions
Heat gas or charcoal grill. In 10-inch nonstick skillet, mix beans, tomatoes, jalapeno and cumin. Bring to a boil. Stir in chicken. Cook 5 minutes or until mixture is thick and thoroughly heated, stirring occasionally. Place tortillas on grill over medium-low heat. Quickly spread each with about 3/4 cup of the bean mixture. Top with cheese and onions. Grill 2 to 3 minutes or until tortilla bottoms are crisp and brown and cheese is melted. Watch carefully. Slide onto heat-proof tray or cookie sheet. To serve, cut into wedges.
Serving Suggestions: Serve these grilled tacos with shredded lettuce, avocado and salsa. For a quick appetizer, cut into small wedges.
Tips: If grill heats unevenly, rotate tortillas as they cook for more even browning. Use leftover grilled chicken for these open-face tacos.
